Pressure Cooker Corn Dog Bites
Ingredients:
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup milk
- 2 large eggs
- 8-10 mini hot dogs
- Cooking oil for greasing
- Ketchup and mustard for dipping optional
Instructions:
In a mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, salt, and black pepper
In another bowl, whisk together the milk and eggs until well combined
Pour the wet ingredients into the dry ingredients and stir until you have a smooth batter
Grease the compartments of your pressure cooker egg mold with cooking oil
Cut each mini hot dog into 2-3 bite-sized pieces
Place a piece of mini hot dog into each compartment of the egg mold
Spoon the cornmeal batter over the mini hot dogs, filling each compartment about 2/3 full
Close the egg mold and lock it in place
Add 1 cup of water to your pressure cooker and place the egg mold on the trivet inside the cooker
Seal the pressure cooker and set it to cook on high pressure for 10 minutes
Once the cooking cycle is complete, carefully release the pressure and open the cooker
Remove the egg mold, and let it cool for a few minutes before opening
Gently remove the Corn Dog Bites from the mold using a fork or silicone spatula
Serve the Pressure Cooker Corn Dog Bites hot with ketchup and mustard for dipping if desired
