Quinoa Winter Bowl

A healthy and tasty quinoa bowl with a mix of nuts, pomegranate seeds, and winter vegetables. This dairy-free recipe is great for a healthy winter meal because it is full of flavor and good for you.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 sweet potato, diced
  • 1 cup Brussels sprouts, halved
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup kale, chopped
  • 1/2 cup pomegranate seeds
  • 1/4 cup chopped walnuts
  • Juice of 1 lemon
  • Fresh parsley for garnish

Instructions:

In a saucepan, combine quinoa and vegetable broth

Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked

In a large skillet, heat olive oil over medium heat

Add onion and garlic, saut until softened

Add sweet potato and Brussels sprouts to the skillet

Season with smoked paprika, salt, and pepper

Cook until vegetables are tender

Stir in cooked quinoa, kale, pomegranate seeds, and walnuts

Cook for an additional 5 minutes, allowing flavors to blend

Drizzle lemon juice over the mixture and toss to combine

Serve the quinoa winter bowl topped with fresh parsley
