This Spaghetti with Five-Herb Pesto is a vibrant and flavorful twist on traditional pesto pasta. The combination of five fresh herbs adds depth and complexity to the sauce, while Parmesan cheese and pine nuts provide richness and texture. Ingredients:

  • 250g spaghetti
  • 2 cups fresh basil leaves
  • 1/2 cup fresh parsley leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh chives
  • 2 cloves garlic
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 1/2 cup extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Instructions:

Cook spaghetti according to package instructions until al dente

Drain and set aside

In a food processor, combine basil, parsley, mint, cilantro, chives, garlic, Parmesan cheese, and pine nuts

Pulse until finely chopped

With the food processor running, slowly drizzle in the olive oil until the mixture forms a smooth paste

Season the pesto with salt and pepper to taste

Toss the cooked spaghetti with the prepared pesto until evenly coated
