Vegan Biscuits & Gravy

A comforting vegan version of the classic biscuits and gravy, perfect for a hearty breakfast or brunch. Fluffy biscuits paired with a flavorful vegan sausage gravy make for a satisfying meal.

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter, chilled and cubed
  • 3/4 cup non-dairy milk
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • 1/4 cup all-purpose flour for gravy
  • 2 cups non-dairy milk for gravy
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup vegan breakfast sausage, crumbled
  • 1/2 teaspoon dried sage

Instructions:

Preheat the oven to 425F 220C

In a mixing bowl, combine flour, baking powder, baking soda, and salt

Add chilled cubed vegan butter to the flour mixture

Using your fingers or a pastry cutter, cut the butter into the flour until it resembles coarse crumbs

In a separate bowl, mix non-dairy milk and apple cider vinegar

Let it sit for a few minutes until it curdles slightly

Add the milk mixture to the flour mixture and stir until just combined

Transfer the dough onto a floured surface and gently knead until it comes together

Do not overwork the dough

Using a biscuit cutter, cut out biscuits and place them on a baking sheet lined with parchment paper

Bake for 12-15 minutes or until the biscuits are golden brown and cooked through

While the biscuits are baking, prepare the gravy

In a skillet, heat olive oil over medium heat

Add crumbled vegan sausage and cook until browned

Sprinkle flour over the sausage and cook for 1-2 minutes, stirring constantly

Slowly pour in non-dairy milk while stirring continuously to prevent lumps from forming

Add garlic powder, onion powder, dried sage, salt, and pepper

Cook until the gravy thickens, stirring occasionally

Once the biscuits are done, serve them hot with the prepared gravy
