Vegan Chai Banana Bread w/ Cream Cheese Frosting
Ingredients:
- 3 ripe bananas, mashed
- 1/3 cup melted coconut oil
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon chai spice mix
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup almond milk
- 1 tablespoon apple cider vinegar
- For the cream cheese frosting:
- 1/2 cup vegan cream cheese
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions:
Preheat oven to 350F 175C
Grease a loaf pan and set aside
In a large bowl, mix mashed bananas, melted coconut oil, brown sugar, vanilla extract, and chai spice mix
In another bowl, sift together flour, baking soda, and salt
Combine the wet and dry ingredients, then add almond milk and apple cider vinegar
Mix until just combined
Pour the batter into the prepared loaf pan and smooth the top
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean
Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely
For the frosting, beat vegan cream cheese, powdered sugar, and vanilla extract until smooth and creamy
Once the banana bread has cooled, spread the cream cheese frosting over the top
Slice and serve
