Bacon Rotel Cheese Appetizer Cups

These Bacon Rotel Cheese Appetizer Cups make the ideal treat for a game day get-together or party. Nestled within fluffy crescent roll cups, they are brimming with crispy bacon, smoky Rotel tomatoes and chiles, and melted cheddar cheese.

Ingredients:

  • 10 slices of bacon
  • 1 can of Rotel diced tomatoes and green chilies 10 ounces
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup chopped green onions
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper optional
  • 1 can refrigerated crescent roll dough 8 ounces

Instructions:

Set the oven temperature to 375F 190C

In a skillet over medium heat, cook the bacon until crispy

After cooking, break up the bacon into tiny bits

Crumbled bacon, diced tomatoes and green chilies undrained from Rotel, shredded cheddar cheese, mayonnaise, chopped green onions, garlic powder, onion powder, chili powder, and cayenne pepper if using should all be combined in a mixing bowl

Blend thoroughly

The crescent roll dough should be unrolled and divided into eight triangles

To form the pastry cups, press each triangle into the cups of a muffin tin

Evenly spoon the cheese and bacon mixture into each pastry cup

Bake for 15 to 20 minutes in a preheated oven, or until the filling is hot and bubbling and the pastry cups are golden brown

Take out of the oven and allow it to cool down a little before serving
