Harissa Veggie Bowl
This Harissa Veggie Bowl is a delicious and nutritious salad with a spicy kick from the harissa sauce. Packed with fresh vegetables, quinoa, and a zesty dressing, its a perfect meal for a quick lunch or dinner.
Ingredients:
- 2 cups of cooked quinoa
- 1 cup of cherry tomatoes, halved
- 1 cup of cucumber, diced
- 1 cup of bell peppers, diced assorted colors
- 1/2 cup of red onion, finely chopped
- 1/2 cup of fresh cilantro, chopped
- 1/4 cup of harissa sauce
- 2 tablespoons of olive oil
- Juice of 1 lemon
- Salt and pepper to taste

Instructions:
Cook the quinoa and put it in a large bowl
Add the cucumber, bell peppers, red onion, fresh cilantro, and cherry tomatoes
Stir the harissa sauce, olive oil, lemon juice, salt, and pepper together in a small bowl
This will make the dressing
Add the dressing to the quinoa and vegetable mix and mix everything together well to cover it all
Put the mixed greens into four bowls to serve
Add some of the harissa vegetable and quinoa mix to the top of each bowl
If you want, you can add more cilantro as a garnish
Serve your Harissa Veggie Bowl right away and enjoy it
