Roasted Chili Maple Pork Tenderloin
Ingredients:
- 2 pork tenderloins about 1
- 5 lbs each
- 1/4 cup pure maple syrup
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- Salt and black pepper, to taste
Instructions:
Preheat your oven to 375F 190C
In a small bowl, whisk together the maple syrup, olive oil, minced garlic, chili powder, smoked paprika, ground cumin, salt, and black pepper to create the marinade
Place the pork tenderloins in a large zip-top bag and pour the marinade over them
Seal the bag and massage the marinade into the pork, ensuring its evenly coated
Let it marinate in the refrigerator for at least 30 minutes, or preferably, overnight
Remove the marinated pork from the refrigerator and let it come to room temperature for about 15 minutes
Heat an oven-safe skillet over medium-high heat
Once hot, sear the pork tenderloins on all sides until they develop a nice crust, about 2-3 minutes per side
Transfer the skillet with the seared pork tenderloins to the preheated oven and roast for about 20-25 minutes or until the internal temperature reaches 145F 63C
You can baste the pork with any remaining marinade halfway through cooking
Remove the skillet from the oven and tent the pork with aluminum foil
Allow it to rest for about 5-10 minutes before slicing
Slice the roasted chili maple pork tenderloin and serve it with your favorite Paleo-friendly side dishes
