Meyer Lemon Sprinkle Cookies - Prettiest Cookies Ever
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon Meyer lemon zest
- 1 tablespoon fresh Meyer lemon juice
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup rainbow sprinkles
- Powdered sugar for dusting
Instructions:
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs one at a time, mixing well after each addition
Stir in the vanilla extract, Meyer lemon zest, and Meyer lemon juice
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the rainbow sprinkles gently, making sure not to overmix the dough
Cover the cookie dough and refrigerate for at least 30 minutes
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
Take the chilled cookie dough out of the refrigerator and shape it into small balls
Place them on the prepared baking sheet, leaving space between each cookie
Using the bottom of a glass, press down on each cookie ball slightly to flatten it
Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
Once the cookies have cooled, dust them with powdered sugar for an extra touch of sweetness
