Roasted Brussels Sprouts and Bacon Pasta Salad
A hearty and tasty pasta salad with crispy bacon, roasted Brussels sprouts, and a creamy Dijon dressing. This is a great side dish or light meal.
Ingredients:
- 12 oz Brussels sprouts, trimmed and halved
- 6 slices bacon, chopped
- 8 oz pasta your choice, cooked and cooled
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- Salt and black pepper to taste
- For the dressing:
- 1/4 cup mayonnaise
- 2 tablespoons Greek yogurt
- 2 tablespoons Dijon mustard
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon honey
- Salt and black pepper to taste
Instructions:
Preheat your oven to 400F 200C
In a large mixing bowl, toss the halved Brussels sprouts with 2 tablespoons of olive oil, salt, and black pepper
Spread the Brussels sprouts evenly on a baking sheet and roast them for 20-25 minutes until they are tender and slightly crispy, stirring once or twice during cooking
In a skillet, cook the chopped bacon over medium heat until it becomes crispy
Remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess grease
In a large salad bowl, combine the cooked and cooled pasta, roasted Brussels sprouts, cherry tomatoes, red onion, and crispy bacon
In a separate bowl, whisk together the dressing Prep Time: 20 minutes
