Roasted Garlic Chicken Soup
Roasted garlic chicken soup is a healthy and comforting meal that is great for cold days and is keto-friendly. When you roast garlic, its natural sweetness comes out, which gives the soup more depth of flavor. It is a dish that will keep you full because it is high in protein and low in carbs.
Ingredients:
- 1 whole chicken, cut into parts
- 1 head of garlic
- 2 tablespoons olive oil
- 8 cups chicken broth
- 1 onion, diced
- 2 celery stalks, chopped
- 2 carrots, chopped
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Preheat oven to 400F 200C
Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30 minutes or until garlic is soft and golden brown
In a large pot, heat olive oil over medium heat
Add onion, celery, and carrots, saut until softened, about 5 minutes
Add chicken parts to the pot and brown on all sides, about 5 minutes
Pour in chicken broth and add dried thyme
Squeeze roasted garlic cloves into the soup
Bring to a boil, then reduce heat and let simmer for 30-40 minutes until chicken is cooked through
Remove chicken from the pot, shred the meat, and discard bones
Return shredded chicken to the pot
Season soup with salt and pepper to taste
Serve hot, garnished with fresh parsley
